Cheddar and potato risotto, ricotta gnudi on cider-braised cabbage with crisp anchovy breadcrumbs, and baked onions with a blue cheese sauce

Cheddar and potato risotto

2 tablespoon olive oil
2 shallots, peeled and really carefully sliced

Ricotta gnudi with cider-braised cabbage and pangrattato
Prep 15 minutes
Chill Overnight
Cook 1 hr
Serves 4 as a main dish
For the gnudi
250 g ricotta — I utilize Westcombe
85 g parmesan, carefully grated, plus additional to serve
20 g semolina flour, plus 200 g additional for rolling
Nutmeg
Zest of 1/2 lemon
For the cabbage
1 leek, cut and carefully sliced
1 shallot, peeled and carefully sliced
2 garlic cloves, peeled and carefully sliced
Sea salt and black pepper
1 tsp caraway seeds(optional)
2 bay leaves
75 ml olive oil
1 medium green cabbage, quartered, cored and shredded
300 ml dry cider
50 g butter
1 dash cider vinegar
150 g creme fraiche
1 handful sliced flat-leaf parsley
For the pangrattato
4 pieces stagnant sourdough, torn into pieces
2 tablespoon olive oil
Zest of 1 lemon
1 garlic clove, peeled and carefully grated
Put all the gnudi active ingredients in a medium bowl and carefully fold together– do not overmix, or the gnudi will be too thick. Put the 200 g semolina flour in an oven tray. Kind the gnudi mix into 20 x 20 g balls, then roll them in the semolina so they’re all totally covered and semi-submerged. Chill overnight, turning one or two times in the semolina.
In a big pan for which you have a cover, carefully sweat the leek, shallot, garlic, a pinch of salt and the caraway, if utilizing, in the olive oil for about 12 minutes, up until soft. Baked onions, and walnuts
Prep 10 minutes
Cook 45 minutes
Serves 4 as a starter/ side
For the onions
1 tablespoon olive oil
4 red onions, unpeeled, halved through the root
Sea salt and black pepper
200 ml veggie stock
75 g muscovado sugar
50 ml sherry or balsamic vinegar
A couple of thyme sprigs
4 toasted walnuts, to end up
For the cheese sauce
200 g velvety blue cheese– I utilize Bath Blue
100 ml milk
100 ml cream
1 garlic clove, peeled and slammed
2 thyme sprigs
1/2 tsp dijon mustard
30 ml marinaded walnut vinegar(ie from the container)
For the dressing
1/2 tsp dijon mustard
4 marinaded walnuts, sliced
75 ml marinaded walnut vinegar
150 ml olive oil
1 tsp great capers, rinsed and sliced
1 handful carefully sliced flat-leaf parsley
A couple of chervil sprigs, optional
Put the oil in a big ovenproof frying pan on a medium heat. Season the cut side of the onions, lay them flat in the hot pan and press down. Do not move them for 3 to 5 minutes, till they are great and charred.
Add the stock, sugar, vinegar and thyme, cover with greaseproof paper and a cover, then move to a 200 C (180 C fan)/390 F/gas 6 oven and bake for 8 to 12 minutes, up until tender. Raise out the onions and keep warm, then lower the liquid to a light caramel glaze.
Put all the sauce components in a medium pan on a low-medium heat and delegate instill and melt really carefully for a minimum of 20 minutes– do not let it boil or the sauce will divide. Fish out and dispose of the garlic and thyme, then blitz the rest and reserved.
Meanwhile, blend all the dressing components in a bowl, season to taste and reserve.
Separate the onion layers into “cups”, then gown in the decreased cooking alcohol glaze. Put a swimming pool of the warm cheese sauce into 4 bowls, set up some onions to one side, leading with dressing and grate over the toasted walnuts utilizing a microplane.
